Ever started to bake something only to realize midway that the recipe calls for animal product which you don’t consume, or are allergic to, or just simply happen not to have them?

I have switched to veganism for now over 4 years and after experimenting with a lot of baking substitutes following are the ones that have worked wonders for me.
Purpose of switching to vegan substitutes
You might have noted that over the past few years veganism and vegan recipes are getting more popularity day by day. Since the reasons for switching to a vegan diet are more compelling and gives way more benefit than traditional diets. Here are some of the reasons why vegan recipes are for everyone. Such as vegan meals gives great health benefits since vegan meals and vegan recipes contain lesser saturated fats and then help with lowering your cholesterol levels. Vegan lifestyle is also great since it accommodates a wide variety of dietary restricted groups such as allergies, lactose intolerance etc. veganism is also a great way for the betterment of the environment and is cruelty free. Lastly the reason which compels me towards veganism is the range of versatility and the room for creativity.
Vegan substitute for egg
The prime reason for using egg in any baking recipe is that it give the product structure, texture and moisture. You can always replace egg with many vegan substitutes that will give the same results as an egg if not the same.
- For cookies, muffins and pancakes you can substitute 1 egg with 1 tablespoon of flax seed in 3 tablespoons of water, for multiple egg just multiple the ratios.
- If you are looking for an egg replacement in cakes and brownies you can use apple sauce it will give great moisture to your baked goods. ¼ cup of apple sauce makes replacement for 1 whole egg.
- Mashed banana makes a great egg replacement it adds moisture, gives natural sweetness and density to your baked product. Great for banana bread and muffins
- Aquafaba or chickpea water also makes a great substitute for egg, it whips just like an egg white and can be used in making meringues, macarons and sponge cakes. Just add 3 tablespoon of chickpea water and it will replace for one egg.
Vegan substitute for butter
Butter gives flavor and adds moisture into the baked good. You can get the same results by using the following vegan substitutes for butter
- You can always use coconut oil in 1:1 it makes an excellent substitute for cookies and pie crusts.
- Margarines are a great butter replacement for vegans and can be used in any recipe.
- For cookies and bar you can always use nut butter of any nut it gives richness, and adds to the flavor profile.
- Lastly you can always use mashed avocado for giving a creamy texture to your brownies and cakes.
Vegan substitute for milk
Replacing animal milk in any recipe is quite easy since there are many milk substitutes now available at any grocery store. For milk substitutes you can always use nut milks such as almond milk. Coconut milk, and other non-dairy milk sources such as soy and oats milks. All of these substitutes are always used in the same ratio as animal milk.
Vegan substitute for yogurt and cream
Many baked items require cream and yogurt mostly for the icing and filing part.
- Cream is replaced with coconut cream which serves perfect for whipping or filling.
- Cashew cream which is just cashews blended with water serves as a great replacement for cream in cheesecake
- For a vegan friendly yogurt option you can always use plant based yogurts for making moist cakes and muffins.
Vegan replacement for gelatin
Since most commercial gelatin comes from the skin and bones of animals therefore it is not a vegan friendly option. For using a vegan alternate you can try
- Agar agar powder which is derived from plants works great for gummies and puddings
- Pectin is another alternate which is a soluble fiber derived from fruits works best for jams and pie fillings
Some tips for successful vegan baking
Replacing tradition ingredients with vegan and plant based substitutes might seem a little overwhelming at first but the success lies in understanding the roles of each ingredient, experiment with its ratio to get your desired flavor and texture. Lastly don’t shy away from combining substitutes in one recipe.
To conclude, vegan recipes are versatile and easily accessible they offer a wide range of substitutes for diary and animal based components of baked items, allowing you to adhere to your healthy lifestyle and saving the environment.
